NUTRIENT-RICH CHOCOLATE ALMOND SMOOTHIE

This delicious and rich-tasting smoothie is super full of nutrients. So good it could double as a dessert! Serves 2

Ingredients

  • 2 to 3 dates, pitted
  • 2 cups (500 mL) fresh or frozen raspberries
  • 2 cups (500 mL) packed baby spinach leaves
  • 2 cups (500 mL) almond milk
  • 1 cup (250 mL) fresh or frozen pitted cherries
  • 2 Tbsp (30 mL) almond butter
  • 2 Tbsp (30 mL) cocoa powder
  • ¼ tsp (0.5 mL) vanilla extract
  • 1 scoop Botanica Chocolate Perfect Protein

Directions

  1. Chop dates into fine pieces and soak in ¼ cup (60 mL) warm water for 30 minutes.
  2. Drain and place in a blender with remaining ingredients and whirl until smooth.
  3. Pour into a glass and garnish.

TROPICAL CLEANSING GREEN SMOOTHIE

For a healthy smoothie, this mixture comes full with 5 servings of vegetables and delicious fruit plus healthy omega 3 from ground flax. Serves 2

Ingredients

  • 2 cups (500 mL) coconut milk
  • 2 scoops Botanica Berry Perfect Greens
  • 1 large banana, frozen, peeled and sliced
  • 1 tbsp (15 mL) ground flax

Directions

  1. Whirl ingredients in a high-speed blender until smooth and frothy.
  2. Pour into two glasses and garnish.

C-BLAST IMMUNE-BOOSTING SMOOTHIE

This delicious smoothie is packed with protein and vitamin C to help get you back on track. Serves 1

Ingredients

  • 1 scoop Botanica Vanilla Perfect Protein
  • 1 large pink grapefruit, peeled, seeded and cut into chunks
  • 1 cup (250 mL) diced fresh or frozen pineapple
  • ½ cup (125 mL) fresh or frozen orange juice
  • ½ cup (125 mL) non-fat Greek yogurt
  • 2 or 3 ice cubes, optional

Instructions

  1. Whirl all ingredients together in a blender until smooth.
  2. Pour into a glass and garnish.

Health Holiday Recipes: Linzer Cookies

LINZER COOKIES
with NUTS TO YOU

Ingredients

  • 1/2 cup butter, softened
  • 2/3 cup cane sugar
  • 3 egg yolks
  • 1/2 cup NUTS TO YOU Almond butter
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1 1/2 cups all-purpose flour
  • 1 jar (235-250ml) raspberry jam

Directions

Preheat oven to 325°F.

In a large bowl, cream butter. Add sugar and beat until blended. Add egg yolks gradually and beat until combined. Mix in almond butter and vanilla extract, and beat again until well blended.

In a separate bowl, mix baking powder and flour. Add to the butter mixture and mix until dough begins to clump together. 

Roll dough into tablespoon-sized balls and place on a baking sheet lined with parchment paper. With the end of a wooden spoon, poke a hole in the centre of each ball and fill with jam using a small spoon.

Bake cookies for 15 minutes, or until golden brown. Let cookie cool on a metal rack.

Yields approximately 36 cookies. Almond butter can be replaced with any Nuts to You nut or seed butter.
